Dubai Municipality has finished the trail network in the mountains around Hatta: 86km in all, split into 17 walking routes covering 33km and 21 cycling routes covering 53km. The routes are graded by colour, from green for easy to black for advanced, the way ski runs are.
It is the most useful thing to know before a first visit. Pick the colour, not the trail, and the morning sorts itself out.
Hours and prices change. Check with the venue before you go.

When to go
From November to March, and early. Leave Dubai by 6am, start walking at first light while the rock is still cool, and be finished before the midday heat. Carry more water than seems sensible, and tell someone which route you are on.
On the way
Along the network there are 14 rest stops and nine wooden bridges. Bikes can be hired and repaired on site, so there is no need to bring one.
Red has the most routes of any grade, six on foot and eight by bike, so it is where a regular walker goes on a second visit.
How we checked
Every fact here comes from the venue's own website, menu, booking page or Instagram, or from the Michelin Guide and official listings.
